Mexican Street Corn Dip

    Whip up a batch of this spicy corn fiesta dip featuring our pepperjack cheese and get ready to impress your guests with your culinary skills. It's the perfect dish for game day, potlucks, or any occasion that calls for a little extra flavor and fun. ¡Viva la fiesta!

Ingredients:

Pepperjack Wedge

2 cups frozen corn, thawed

2 ears of corn, grilled/charred

2 Tablespoons Oil

1/2 yellow onion, chopped and sautee

1 teaspoon Taco Seasoning

2 cloves garlic, chopped

1 cup plain yogurt

2 Tablespoons Taco Seasoning

A Handful of Cilantro, chopped

Jalapeno, thinly slice

Tortilla chips

Instructions:

● Thaw frozen corn in large bowl

● Grill corn cobs in a grill pan or cast iron. Set aside to cool and then cut kernels from cob.

● Chop yellow onion and saute with 2 Tablespoons of oil and 1 teaspoon of taco seasoning. Set aside to cool.

● Chop garlic.

● Blend pepperjack wedge with plain yogurt in food processor. Alternatively, you can combine these ingredients on the stovetop in a saucepan.

● To bowl with thawed corn add: grilled corn, sauteed onion, chopped garlic, cheese + yogurt mixture, and 2 Tablespoons taco seasoning. Mix well.

● Top with chopped cilantro and sliced jalapeno.

● Enjoy with tortilla chips!
