RECIPE

Serves: 4 Bowls

Prep time: 20 minutes

Cook time: 20 minutes

 

Ingredients:

Roasted Chickpeas 

1 can chickpeas

1 TBSP avocado oil 

¼ tsp Himalayan sea salt 

¼ tsp. garlic powder

¼ tsp. smoked paprika


Tahini Dressing 

¼ cup runny tahini

1 TBSP lemon juice 

¼ cup filtered water + more as needed 

1/4 tsp garlic powder

¼ tsp fine sea salt


Mediterranean Buddha Bowl 

3-4 cups mixed greens

1 bell pepper, chopped

¼ cup red onion, chopped

1 English cucumber, chopped

½ cup cherry tomatoes, halved

¼ cup pitted Kalamata olives

1 cup roasted chickpeas (recipe above)

1 cup hummus

6-oz. Darë Oh My Goat vegan goat cheese, crumbled

¼ cup chopped fresh parsley


Instructions:

First, prepare the roasted chickpeas. Preheat the oven to 375°F and line a baking sheet with parchment paper.

Drain and rinse the chickpeas then dry them thoroughly with a kitchen towel or paper towel.

Place the dried chickpeas in a small mixing bowl and mix in the avocado oil, salt, garlic powder, and smoked paprika.

Add the chickpeas onto the lined baking sheet and spread them out into a single layer. Bake the chickpeas for 20-25 minutes, stirring half way through. Chickpeas are done when they start to split and look brown and crispy! 

Next, prepare the tahini dressing. Add all ingredients for the tahini dressing into a dressing shaker or mixing bowl.

Whisk with a fork or shake with a lid until the dressing is smooth and creamy. Add more water if needed to reach the desired consistency. 

Next, prepare the buddha bowls. Add the greens, peppers, onion, cucumbers, tomatoes, and olives to a bowl. Top with the roasted chickpeas. 

Add the crumbled Oh My Goat cheese and hummus and top with fresh parsley. 

Drizzle dressing on top of your bowl and serve immediately!
