Ingredients
Ladyfinger Layer
- 1 and 1 half cups gluten free cookies or biscuits, vanilla or plain
- 1 half cup strong brewed coffee or espresso, cooled
- 1 tablespoon pure maple syrup
Cream Cheese Layer
- One 8 ounce container vegan cream cheese
- One half cup coconut cream
- One quarter cup pure maple syrup, or to taste
- 1 to 2 tablespoons unsweetened almond milk as needed to thin
Chocolate Dusting Layer
- Pinch of unsweetened cocoa powder
- 1 tablespoon shaved vegan chocolate or cacao nibs
Instructions
Brew your coffee or espresso and set it aside to cool. Stir the maple syrup into the cooled coffee in a shallow bowl.
Make the cream cheese layer. In a mixing bowl, whisk the vegan cream cheese and coconut cream until smooth and thick. Add the maple syrup and whisk again. If the mixture feels too thick, whisk in almond milk a little at a time until creamy and spoonable.
Prepare the cookie layer. Break the gluten free cookies into small pieces that fit easily into the base of each jar. Dip each piece briefly into the coffee mixture. You want them lightly soaked but not falling apart.
Start assembling. Press a layer of soaked cookies into the bottom of each jar. Spoon a generous layer of the cream mixture over the top, smoothing it gently. Repeat the cookie and cream layers until you reach the top.
Finish with a light cocoa dusting and optional chocolate shavings.
Refrigerate the cups for at least two to four hours so the flavors can meld and the cream can set. Overnight is even better.
