Easy Vegan Antipasto Skewers

 

Whether you're heading to a long weekend potluck, lounging in someone's backyard, or simply celebrating the joy of togetherness with your chosen fam - this simple, plant-based (and gluten-free) recipe is here to make your summer gathering snack spread shine.

 

These vegan antipasto skewers are fresh, festive, and flavor-packed; basically, a whole appetizer platter on a stick. They’re quick to make, healthy (hello, veggies and good fats!), and guaranteed to disappear faster than you can say “pass the balsamic.”

While we’re not going full red-white-and-blue this year, we are raising a cheesy skewer to connection, community, and dang good food.

 

What You’ll Need (and Why You’ll Love It)

 

🧀 Darë Balsamic Fig Wedge: This one’s the flavor hero. Rich, tangy, and slightly sweet, it balances out the saltiness of the olives and the zip of the pepperoncini. Plus, it’s made with whole-food ingredients and zero dairy.

🍅 Cherry Tomatoes: Juicy, vibrant, and packed with antioxidants like lycopene, these lil’ gems bring brightness and pop to each bite.

 

🌿 Fresh Basil Leaves: Basil brings in that herby, slightly sweet freshness that makes everything taste like summer. Also: vitamin K, anti-inflammatory goodness, and vibes.

 

🥒 Artichoke Hearts: Low in calories, high in fiber, and full of prebiotics that love your gut back. 

 

🫒 Mixed Olives: Briny, bold, and rich in healthy fats. We like a mix of green and black olives to keep things interesting (and aesthetically pleasing, obviously).


🌶️ Pepperoncini: Mildly spicy and slightly tangy, they're great for digestion and adding a little zing to the party.

 

Optional but recommended: a quick dressing with olive oil, red wine vinegar, and Italian herbs. Drizzle for extra oomph.

RECIPE

Ingredients (makes 8 skewers):

 

8 skewers (bamboo or stainless steel)

1 Darë Balsamic Fig Wedge, diced or rolled into 1” balls

16 artichoke hearts

16 pepperoncini

16 pitted mixed olives

16 cherry tomatoes

16 fresh basil leaves

 

Optional Dressing:

2 TBSP olive oil

1 TBSP red wine vinegar

1 tsp Italian seasoning

¼ tsp garlic powder

¼ tsp Himalayan sea salt

 

Instructions:

Skewer all of the antipasto ingredients on bamboo skewers in a fun pattern. Try using 2 of each ingredient and in a consistent pattern for each skewer. 

Mix up the optional dressing by adding all of the ingredients to a small mixing bowl and whisk with a fork until well combined. 

Arrange skewers on a serving platter and serve with optional dressing drizzled on top.
