Tips for Foil Packet Success


1. Don’t skimp on the foil. Use a double layer if your grill runs hot.

2. Fold tightly, but leave room. You want a good seal to trap steam, but leave some air inside the packet so everything cooks evenly.

3. Be careful when opening. Steam burns are real. Let it cool a minute before unwrapping.

RECIPE:


Serves 4–6

Prep time: 30 mins

Cook time: ~30 minutes


Ingredients:

Vegetable Foil Packets:

1 zucchini squash, chopped

1 yellow squash, chopped 

1 red onion, diced

1 large bell pepper, diced

1 cup cherry tomatoes, halved

1 15-oz. can chickpeas, drained and rinsed

1 TBSP avocado oil

¼ tsp Himalayan sea salt

¼ tsp black pepper


Lusty Mustard Sauce:

1 Darë Lusty Mustard Wedge

¼ - ½ cup unsweetened almond milk


Instructions:

 

Preheat your grill OR preheat the oven to 400ºF and prepare a baking sheet. Tear 6 sheets of aluminum foil about 8-10” long and arrange them on the counter top.  

Add the chopped vegetables and chickpeas to a large mixing bowl and drizzle with avocado oil, then add the Himalayan sea salt and black pepper. Toss the vegetables until they’re evenly coated in oil and seasoning.

Add the vegetables to the center of the aluminum foil sheet and fold the edges in on itself so it’s closed. Cook on the grill for 20-25 minutes OR roast on a baking sheet in the oven for 30-35 minutes. The vegetables are done when they’re fork tender and slightly browned on the edges. 

Open the foil packet and allow the packet to cool slightly. Be careful, because they will be hot and emit lots of steam once opened! 

While the vegetables are grilling/roasting, prepare the Lucky Mustard Sauce. Add the Lusty Mustard Wedge to a small saucepan with ¼ cup unsweetened almond milk. Heat the pan over medium low heat to allow the cheese to slowly melt. Use a spatula to slowly mix the cheese and create a sauce with the almond milk. Once the cheese is completely melted, check the sauce consistency. It should be smooth and pourable. If it’s still too thick, add a little more almond milk. 

Serve the foil packet contents topped with a drizzle of Lucky Mustard Sauce. You can serve solo or over your favorite grain like quinoa or rice, or a big pile of greens with a lemony vinaigrette
