You need something that not only survives a backpack, but actually gets eaten instead of traded for someone's fruit snacks. These wraps are here to help!

Roll creamy Pepperjack, cucumber ribbons, bell peppers, and shredded carrots into a soft tortilla, slice it into pinwheels, and you've got real food ready in less time than it takes to find matching socks. This is a five-minute assembly line you can run on repeat all week.

Why this recipe works

Good lunchbox food has to do two things:

Hummus is doing double duty as glue and flavor. A thin smear of your kid’s favorite flavor adds another layer of excitement to each bite and it holds every ingredient in place. It’s no fun for all the fillings to slide out on the first bite. Adding thin slices of cheese and veggies keeps the spiral tight enough to cut clean. And look fun too!

The magic ingredients

Pepperjack

The star of the wrap. Darë Pepperjack is the best vegan cheese for balanced flavor and sliceable enough to layer into a wrap without falling apart. The best part? It actually tastes like cheese, so no compromises are required at the lunch table.

Cucumber ribbons

Thin enough to roll instead of poke through the sides. They add cool, crisp crunch and a lil hydration.

Bell peppers

Different colors bring different sweetness levels and a wrap that looks like a rainbow once you slice it. These are a great ingredient to have prepped, for use all week in lunches or for quick thrown together dinners.

Shredded carrots

The easiest way to add a pop of orange and a little extra crunch. Pre-shredded works fine here. We’re trying to make mornings easy, cheesy here!

Hummus

A thin layer holds everything in place and keeps the tortilla from getting soggy. Hummus is so versatile too! Whatever flavor gets your kid excited to eat would work well in these wraps.

Pick a soft, pliable tortilla

Stiff tortillas crack when you roll them. Soft and fresh is what you're after, especially if these are heading into a lunchbox and need to survive a little jostling.

Go thin on everything

A thin layer of hummus, thin cheese slices, and thin veggie strips roll tighter and slice cleaner. Better to make more wraps, than to overfill. Overfilled wraps fall apart, and nobody wants to explain that to a hungry seven-year-old. 

Skip the toothpick for lunchboxes

The original method pins the seam with a toothpick so the wraps stand upright for serving. Very cute for a snack board, but not something we suggest adding in a kid's lunchbox. Just pack the pinwheels seam-side down in a snug container instead. They'll hold just fine.

Batch it on Sunday

Roll a few wraps at once and store in the fridge. Do a quick slice the morning of while packing the full lunch. Mornings get a lot easier when the only decision left is which container to grab!

Get creative

This wrap is a solid base for whatever's in the crisper drawer.

Swap the bell peppers for snap peas or thin apple slices if that's what's on hand. Add a smear of mustard for extra tang, or swap the hummus for a thin layer of Darë Original Cream Cheese if you want it extra cheesy. Cut the pinwheels smaller for little hands, or leave them whole and call it a snack for you.

Want a milder version? Swap the Pepperjack for Darë Smoked Cheddar. You'll be adding a smoky, crowd-pleasing flavor, and it’s the perfect swap for the kid who says everything is "too spicy." But from our testing, the Pepperjack is usually kid-approved!

Is Darë Pepperjack safe for nut-free school policies?

Not for tree-nut-free classrooms. All Darë cheese is made from a cashew base, so check your school's specific nut policy before packing it if your child's classroom restricts tree nuts.

How far ahead can I make these?

Roll them up the night before and store in a sealed container in the fridge. Multiply the recipe based on how many wraps you need for the week.

Can I make this a gluten-free wrap?

Yes. Swap in a gluten-free or grain-free tortilla, and look for a soft variety so it doesn't crack when rolled.

What other veggies work in this wrap?

Anything thin and crisp. Try shredded red cabbage, thin radish slices, or snap peas if you want to switch up the lineup.

Storage

Store rolled wraps in a sealed, airtight container in the fridge. For best texture, slice them the morning you plan to eat them rather than the night before, since pre-cut edges dry out faster.

Ingredients

  • 1 large (8-inch) soft tortilla
  • 1 tbsp unflavored hummus (or other spread as desired)
  • 4 thin slices Pepperjack
  • 2 cucumber ribbons
  • 4 thin bell pepper slices, assorted colors
  • 1 tbsp shredded carrots

Directions

Spread the hummus.

Lay the tortilla flat and spread it with a thin layer of hummus.

Layer the fillings.

Working from one side to the other to build a striped pattern, lay the Pepperjack slices, cucumber ribbons, pepper slices, and carrots onto the tortilla. Leave at least an inch of bare space at the far end.

Roll it tight.

Starting from the cheese end, roll the tortilla and toppings into a tight spiral.

Trim and slice.

Place the roll seam-side down on a cutting board. Trim the curved ends, then cut into four even pieces, about 2 inches each.

Serve or pack.

For snack boards, pin each seam with a toothpick and stand the pinwheels upright. For lunchboxes, skip the toothpick and pack seam-side down in a snug container so they hold their shape.
