Creamy Vegan Pasta How To:

THE RECIPE:

Ingredients:

Balsamic Fig Wedge
2 cups Brussels sprouts, halved
2 cups butternut squash, cubed
2 tbsp neutral oil
8oz pasta of choice
salt and pepper to taste
vegan parmesan for serving (optional)
fresh basil for garnish (optional)

Directions

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.


Prep the veggies: Toss the Brussels sprouts and butternut squash with 2 tbsp olive oil, salt, and pepper. Spread them evenly on the baking sheet and roast for 30-40 minutes, flipping halfway through.

Cook the pasta & sauce: Follow the pasta instructions on the package. Drain the pasta and reserve 1 cup of pasta water. Add the pasta water back into the same pot with the Balsamic Fig Wedge. Heat the wedge and pasta water over medium low heat until the wedge is completely melted.

Plate it up: Add the cooked pasta into the sauce pot and stir everything until the noodles are well coasted by the sauce. Add the roasted vegetables and stir to mix. Serve the roasted vegetable pasta warm with vegan parmesan cheese and fresh basil.
